When we talk about healthy foods, the first thing come on our mind is a green and healthy salad. Be conscious about what you eat, even in your salads. There are lots of food that sounds healthy, but not. A full bowl of healthy green salads is all you need to have you in your diet plan.
I have tried lots of varieties of salads in my dinner, lunch experimentally. From this experience, I found that there are few healthy green salads are really tasty. Eating green is sounding bad and bitter in taste. But trust me these salads are really tasty and healthy. You must try.
Green Goddess Carrot Salad:
This is one of the healthiest ones. With lots of carrots and green leafy veggies, you can enjoy your diet too.
The ingredients you need:
- Baby carrots.
- Lettuce leaf.
- Olive oil.
- Plain yogurt.
- Lime juice.
- Dijon mustard.
- Chopped garlic.
- Pinch of salt.
- Pepper powder.
- Fresh Basils.
- Mint leaves.
First of all, you need to preheat the oven. Trim the baby carrots lengthwise. Cut the Lettuce leaves separately. Toss the carrots for a few minutes with a pinch of salt until crispy.
In a blender add some greek yogurt, 2 tablespoons of lime juice, 2 cloves of garlic, a pinch of salt according to your taste, 1 tablespoon of Dijon mustard and few mint leaves. You can also add a half cup of buttermilk (optional). Blend them well until a smooth and creamy texture forms.
With those sauteed carrots add parsley and the creamy mixture. Mix all together very gently and add half tablespoon of black pepper powder. Your healthy, green and yummy salad is ready.
You can have it in your lunch. Lettuce, carrots, and yogurt will boost up your energy. Carrots are full of vitamin A, vitamin K, potassium. Lettuce contains calcium, iron and vitamin A. In short, they all together help you to maintain a healthy diet.
Beet, mushroom and Avocado Salad:
This one is full of varieties of ingredients and mixed taste. Beet, mushroom, and avocado are well known for their vitamins, minerals, proteins and all. So, here is going to make a very healthy and delicious recipe.
The ingredients you need to have:
- Mushroom caps.
- Olive oil.
- Lemon Juice.
- Finely chopped shallots.
- Baby kale.
- Black pepper.
- Greek yogurt or Dijon mustard.
First of all, you need to cook the mushrooms and beetroot. Preheat the oven for the first few minutes cook beetroot pieces with olive oil and pinch of salt until it softens. Then the second thing you have to do is to cook the mushroom with little olive oil for 6-8 minutes.
In a big bowl add those beetroots and cooked mushrooms. Then add 2 tablespoons of lime juice, chopped parsley, pieces of baby kale, and avocado slices.
In that mixture for seasoning add a pinch of salt according to your taste. A half spoon of black pepper, half cup of yogurt or dijon mustard (according to your taste), finely chopped shallots and mix them well.
A heavenly delicious healthy green salads are ready to serve.
