Healthy and Spicy Scrambled Eggs in 2 Ways

Who doesn’t love egg? Especially when it comes to scrambled eggs, we need nothing else in our breakfast. To make great tasting and great looking scrambled eggs you need a little patience and some easy steps. I am sharing how I make them in my kitchen. You won’t believe how easy and simple this recipe is. Here I am sharing 2 ways of spicy Scrambled Eggs.

  1. Scrambled eggs with veggies.
  2. Cheesy Scrambled Eggs.
  • Scrambled eggs with veggies:

Ingredients you need:

  • A nonstick Pan and a Spatula
  • 3 eggs
  • Butter or oil
  • Carrot- very finely chopped
  • Finely chopped capsicum
  • Finely chopped cabbage
  • Coriander leaves
  • Salt
  • Black pepper
  • Coriander powder
  • Red chilly powder
  • Oregano or Italian seasoning

Process:

  1. Prepare the nonstick Pan:  Heat a nonstick pan in a medium flame. Toss a pat of butter in the pan, I always prefer butter than oil. It enhances the taste of Egg. Make sure the butter coats the whole pan. Wait till the butter and pan get ready.
  2. Beat those eggs:   Take 2-3 eggs according to your requirements. But in the case of scrambled eggs, I prefer 3 eggs. Crack those eggs and beat them until it takes a smooth texture, Then add some pinch of salt and black pepper as per your taste. (never crack those eggs directly into the pan)
  3. Put veggies:  Put carrot, cabbage, and capsicum together. Let them cook for a few minutes. Add some salt.
  4. Put those eggs: When veggies will get soft, add the beaten egg. Then continuously stir them together. Eggs are very delicate and cook very fast. Even on over low heat eggs can go from liquid to overcooked in seconds. It’s very important to take the pan off of the heat before your eggs have finished cooking.
  5. Add spices:  Then add some coriander powder, red chili powder (as per your taste) and oregano. I always prefer to use oregano than Italian seasoning for this recipe. Add some coriander leaves on the top of the egg.

So, your delicious, tasty and healthy breakfast ready to serve.

  • Cheese
  • Salt
  • Black pepper
  • coriander powder
  • Oregano

Process:

  1. Prepare the nonstick Pan:  Heat a nonstick pan in a medium flame. Toss a pat of butter in the pan, I always prefer butter than oil. It enhances the taste of Egg. Make sure the butter coats the whole pan. Wait till the butter and pan get ready.
  2. Beat those eggs:   Take 2-3 eggs according to your requirements. But in the case of scrambled eggs, I prefer 3 eggs. Crack those eggs and beat them until it takes a smooth texture, Then add some pinch of salt and black pepper as per your taste. (never crack those eggs directly into the pan)
  3. Use low heat: In the case of this recipe, you should always low the flame. As the creamy and cheesy texture of the dish is main. Otherwise, it will get very hard. And perhaps the required taste of the dish will be gone.
  4. Swirl then Sweep — I prefer scrambled eggs with larger and thick curds, but love them to be extra creamy. After the moment the eggs hit the pan, I use the spatula to rapidly blend it in small circles around the pan — we do this, without a pause, until the eggs look slightly get thicked and very small curds begin to form (this is the actual creamy part). Then I add the cheese to give it an extra creamy texture. Next, I sweep all the cooked eggs across the pan.
  5. Add spices: Then add some oregano and coriander.

In this process eggs should be running and creamy so, never overcooked.
